This post is just in time for Thanksgiving, and with a nod to a traditional green bean casserole, it should satisfy your nostalgic taste buds! This is a 2 part recipe, and requires a more work than the gluten filled version we are used to seeing. I have also modified it to make it dairy free, because that is how I eat. I love this recipe because I eat more than the french fried onions on top. Anyone else guilty of that? Here are the 2 recipes that you will need to make before you toss it all together and bake it.
Gluten Free Green Bean Casserole
Green bean casserole is pretty standard across the board; cream of mushroom soup, french-cut green beans and french fried onions in a casserole dish. Campbell’s soup adds a little soy sauce and black pepper. I have met people who add cheddar cheese, bacon, ham, raisins, chopped nuts, and pretty soon it’s cobb salad. We aren’t going to get crazy or adventerous here; below are the recipes for gluten free french fried onions and cream of mushroom soup.
Ingredients:
- Fresh, french cut green beans
- Gluten Free french fried onions
- Gluten Free cream of mushroom soup
Steps:
- Preheat oven to 350 degrees F
- Wash and french cut your fresh green beans
- Lay your green beans in a large casserole dish
- Cover green beans with cream of mushroom soup
- Bake for 20 minutes, covered
- Remove cover, stir beans and soup
- Cover with french fried onions
- Bake, uncovered for another 5-10 mins, or until onions are golden brown and crisp
Gluten Free French Fried Onions
My favorite part of any green bean casserole has always been the french fried onions, because they are basically chips. When I went gluten and dairy free my wonderful friends, Chrissy and Mike went the extra mile for me on Thanksgiving. I was wildly excited when I tasted homemade french fried onions for the first time.
You will need just a few ingredients;
- onions, 2 large or 4 small
- 1 cup Gluten free breadcrumbs
- 1/2 cup gluten free flour
- coconut milk, or your choice dairy free milk
- oil for frying
Steps:
- Cut your onions into rings, then soak the onions in your dairy free milk
- Heat the oil, you want shallow oil, it doesn’t need to be so deep
- Drag the onion rings through the gluten free flour and bread crumbs
- Toss in the oil, turning over half way through cooking
- Let your onions drain on a cooling rack over paper towels
- You can eat immediately or top your casserole and bake it
Cream of Mushroom Soup
Using fresh mushrooms and dairy free milk, you can make a hearty base for your casserole. I don’t process or puree my soup because I find the pieces of mushroom remind me of the red and white can classic.
Here are the ingredients you will need;
- 2 cups mushrooms
- 1 cup chicken broth
- 2 cups coconut milk
- 2 TBSN gluten free flour
- 1 TBSN oil
- salt & pepper
Steps:
- Wash and dice the mushrooms
- Heat the oil and the start browning or caramelizing the mushrooms
- Add the flour when the mushrooms start browning
- Stir the mushrooms to coat them evenly in the flour, then start slowly adding the coconut milk
- When you add the coconut milk, stir so that it moistens the flour around the mushrooms and keep stirring to avoid chunk of flour in your soup
- Once all of the coconut milk is incorporated, heat to simmer and cook until it starts to thickens
- This is when you would add your green beans and bake, or your could puree if you want a smooth texture
